
Menu plan, Week of June 18-June 24
This will be my last week of meals in our Indiana home. It’s all so incredibly surreal. It’s like the end of an era. We built this home 8 years ago, almost to the day that we will be moving out. It was our first home as a married couple. We had one baby when we moved here and we’ve since added three more. There are untold number of memories that we have in this home. Here’s to making our last week here unforgettable!
My menu may seem somewhat random since I am trying my best not to do much shopping and use up what we have on hand. We won’t have tons of room to bring food with us, and of course, I’d hate to see our perishable items go to waste, so it’s a week of eating from the pantry, fridge and freezer! I also recognize that this week is going to be absolutely insane, so I am keeping my options open-including the option of throwing any semblance of a plan out the window!
Here’s what we’re having this week-probably, maybe, at least I think we might, well, whatever!
Monday:
- Breakfast: Amish Friendship Bread (I know, this is incredibly unhealthy-but I have starters in my freezer that I want to use up-that and we’re out of our usual steel-cut oats!)
- Lunch: Baby carrots, fruit, yogurt, carmel-marshmallow popcorn
- Dinner: Homemade chicken nuggets, seasoned potato wedges, corn
Prep for Tuesday: thaw roast
Tuesday:
- Breakfast: Amish Friendship Bread
- Lunch: BBQ chicken, applesauce, carrots, green smoothies
- Dinner: Beef roast, corn, peas (shh, don’t tell my daughter, she HATES peas, but I gotta get rid of them lol!)
Prep for Wednesday: Mix-up pancake batter
Wednesday:
- Breakfast: Healthy, Hearty, Whole Grain and Nut Pancakes
- Lunch: Leftovers
- Dinner: Forgotten Chicken, brussel sprouts
Thursday (Thursday will be iffy since this is the day the movers come and I have no idea what time they will be here or how long it will take or how much access to my kitchen I will have, plus we will be staying at a hotel overnight-hopefully we’ll be able to eat at least a couple of the meals at home…on paper plates, on the floor-making for some fun last memories):
- Breakfast: Amish Friendship Bread
- Lunch: Scrambled eggs, fruit
- Dinner: Meatloaf, mashed sweet potatoes, roasted chick peas
Friday:
- Breakfast: At the hotel
- Lunch: Out (we will be in Indy, picking up The Chick Magnet from the airport-woot!-at lunchtime)
- Dinner: Pizza night! (I won’t be making it this time-I got a groupon a while back for a local pizza place, knowing that it might be nice to have a no-fuss meal in the middle of the moving process)
Saturday:
- Breakfast: At the hotel
- Lunch: Snacks-fruit, banana bread (My daughter has a violin performance right at the lunch hour-12:00-1:30-so we will just take snacks with us to eat there as it’s an outside performance)
- Dinner: BBQ sandwiches (my homemade version of sloppy joes), popcorn, hard-boiled eggs, fruit (dinner will be eaten on the road)
Sunday:
Sunday is iffy since we will be on the road. We will be driving through the night. I am hoping to make some breads or muffins or something of the like to take with us so we aren’t eating out for every meal, but who knows how much time I will actually have to do much baking this week. I am probably being overly ambitious but I don’t want to succumb to the fast food temptation, plus we want to be as frugal as possible since this trip is already costing an arm and a leg. We will stay Sunday night at a hotel and close on our house on Monday!

We just moved in May and it was a balancing act planning meals and keeping everything organized! I hope everything goes well with your move. Eating health was definitely a challenge but we found some great options. As your traveling look for little fruit and veggies stands, they usually have great prices and a good selection of produce. If you love whole food sources its a great way to get nutritious foods at a good price.
We like to bring hardboiled eggs on the road. they are super yummy if you break it in half and eat the yolk and then put some cream cheese in the middle. my husband thinks it is gross but it’s my new favorite thing. yummy!
also, turkey/cheese rollups, string cheese, fruit, and cut veggies are all easy on the road.

If you do end up having to eat fast food, you can still make nutrition conscious choices… like getting a salad instead of a burger. Or get a chicken sandwich but hold the bun. Sometimes I’ll take the kids out for McDonald’s ice cream and I get the fruit parfait instead… still get the sweetness but drastically less calories so I don’t feel deprived when watching them eat ice cream because the parfaits are equally yummy.
