
Menu plan, Week of August 6 – August 12
Hey all! I am SO sorry for basically being the “non-existent” blogger these days. I have been dealing with some horrible morning sickness but the last couple of days have been pretty good so I hope it is on its way out and I can get back to a regular schedule with all of my normal activities.
The Chick Magnet has been picking up the slack a lot at home, as has my sweet daughter, she is such a great help to me. I am definitely blessed beyond measure. It’s hard to feel so useless though. I know, in the end, when we have another sweet addition to our family, this will be a distant memory and it is all totally worth it, but it’s been rough the last couple of months. Thank you for hanging in there with me!
On this week’s menu you will see a few holdovers from last week’s menu. There are just many evenings where I have been too sick to cook, so we make a substitution with something my daughter can make, like pancakes, scrambled eggs or even peanut butter and jelly. I am really hoping things continue to improve this week and I can get back in the kitchen on a consistent basis.
Monday:
- Breakfast: Oatmeal
- Lunch: Mini BBQ pizzas, broccoli, fruit
- Dinner: Baked chicken fajitas (Seriously-click that link and tell me those do not look so yum!)
Tuesday:
- Breakfast: Scrambled eggs
- Lunch: Grilled cheese, mangos, carrots
- Dinner: Slow Cooker Cheesy Chicken and Rice, roasted asparagus
Prep for Wednesday: Mix-up pancake batter
Wednesday:
- Breakfast: Healthy, Hearty, Whole Grain and Nut Pancakes
- Lunch: Pizza quesadillas, oranges
- Dinner: Beef stroganoff, spinach salad
Thursday:
- Breakfast: Homemade peanut butter chocolate chip granola with milk/ Greek yogurt
- Lunch: Egg “McMuffins”, avocado
- Dinner: Cube steak, seasoned potato wedges, spinach salad
Friday:
- Breakfast: Giant Breakfast Cookies
- Lunch: Leftovers
- Dinner: Homemade pizza
Saturday:
- Breakfast: Baked Oatmeal (had this last week and it is SO good-definitely going on the regular rotation)
- Lunch: Leftover pizza
- Dinner: Crockpot beef roast, baked sweet potatoes, roasted brussel sprouts
Sunday:
- Breakfast: Scrambled eggs
- Lunch: Out
- Dinner:Leftovers
Snacks:
- Apple Nachos
- Roasted Chick Peas
- Skinny Monkey Cookies
- Veggie Chips (can use kale, sweet potato, spinach, zucchini, summer squash etc…)
- Popcorn
